Waggle Charred Asparagus
Try this quick and simple, sweet and savoury, vegetarian dish... delicious and healthy, and full of umami goodness! You will need:
- Fresh asparagus*
- Ricotta cheese (read to the end for an easy homemade recipe!)
- Parmesan cheese
- Waggle Chilli or Salted Honey
- Any seeds & nuts (pecans and pine nuts work well)
- Salt & pepper to taste
- Olive oil (optional)
Instructions:
- Get a nice char on the veggies using high heat. Either in the oven using the grill, in a very hot pan on the stove, or over some hot coals. Separately, toast your seeds and nuts for a nice smokey flavour.
- Lay the charred veggies on a plate, drizzle with your Waggle Craft Honey, and add some finely grated parmesan. Lastly, crumble over the ricotta and finish it off with your toasted seeds and nuts.
- 1 litre of goat's milk
- 3 tablespoons lemon juice
- 1 teaspoon salt
- Bring the milk to a boil in a large pot on the stove. Add lemon juice and salt and give it a quick 2 second stir.
- Remove the pot from the heat and let it sit for 5 minutes. Don't stir!
- Strain the pot's contents through a tea towel, and voila!
